A food science professor, Julie Miller Jones, will present a seminar titled “Wheat and Gluten: Myths and Facts” at 4 p.m., Nov. 3 in the Great Plains Room of the East Union. The seminar is free and open to the public.
Jones is a distinguished scholar and professor emeritus in the department of family, consumer and nutritional sciences at St. Catherine University in St. Paul, Minnesota.
She is a scientific adviser for many organizations including the EU HealthGrain Forum, the Joint Institute of Food Safety and Nutrition for the University of Maryland and the U.S. Food and Drug Administration, and the carbohydrate committee of the International Life Sciences Institute of North America. Jones regularly writes and speaks about a range of food science and food safety topics, including whole grains, dietary fiber and issues affecting women, such as dieting and body image. In addition, Jones is actively involved in trying to educate consumers against frauds and myths in nutrition and food safety.
The UNL departments of food science and technology, nutrition and health sciences, and agronomy and horticulture are hosting the lecture.
