Mill Coffee & Bistro set for June 12 opening at NIC

Open to public, NIC's first restaurant is a new take on a local favorite

Members of NIC partner Spreetail check out The Mill Coffee & Bistro on June 7. The new restaurant -- the first for Nebraska Innovation Campus -- opens to the public June 12.

The Mill Coffee & Bistro will open for business at Nebraska Innovation Campus on June 12.

The Bistro will be open Monday through Friday from 7 a.m. to 7 p.m., with a menu that features The Mill’s signature coffees and teas as well as an expanded food menu of breakfast items, lunch items, small plates, snacks, wine and beer. The new restaurant is open to the public.

The Mill Coffee & Tea is a small-batch craft coffee roaster, espresso bar and tea house that began in Lincoln in 1975. The new location is The Mill's third, joining the original shop at 800 P Street and its second location at 4736 Prescott Ave.

The Bistro is on the first floor of NIC’s north Innovation Commons building. The space features dining, meeting and gathering space. Guests will find soft seating for small group gathering, a communal table, audio-visual equipment for small meetings and free WiFi.

Owners Daniel and Tamara Sloan described the new restaurant space as warm and welcoming – a modern, comfortable space with décor that provides antique charm.

“The new Mill Coffee & Bistro at Nebraska Innovation Campus provides a collaborative community in an environment that strives to enhance and support education, research and innovation,” Daniel Sloan said.

The Bistro’s menu includes a full line of pastries, quiche, breakfast burritos, yogurt parfaits and fresh fruits. Additional menu items include salads, soups and hot and cold sandwiches, a variety of small plates and snacks. The Bistro also offers cask wine, a selection of bottled wine, and local and regional craft beers.

“We are so fortunate to have The Mill Coffee & Bistro locate at NIC,” said Dan Duncan, NIC executive director. “The Bistro plays a significant role in creating the culture and social activities key to developing an environment of innovation on campus.”
